The monumental wineries of Yarra Yering have maintained high levels of excellence and elegance for ages. This unmatched consistency resulted in the production of Yarra Yering Underhill Shiraz. Sarah Crowe has successfully filled the enormous shoes of Dr. Bailey Carrodus, the winery founder, by meticulously holding on to the winery’s traditions and beliefs. She was deservedly named winemaker of the year in 2014, one of the most prestigious awards in the wine industry: a remarkable achievement and a testimony to her efforts and winemaking business. This Australian Shiraz is robust and spicy with a velvety and a lightly syrupy mouthfeel. Laced with light nettle, vanilla, and lovely balance with berry and white chocolate flavors. The supple palate is chiseled with spicy undertones supported with velvety tannins providing a well-structured combination with a lengthy finish. It showcases a savory set of flavors. Dark-skinned Syrah grapes are harvested by hand or machine from the wineries. They are then transferred to the winery, where they undergo destemming before being fermented on their skins to provide more depth. Fermentation takes place for 12 days with the help of yeast, after which the grapes are pressed to separate them from the skins. Some batches are transferred to oak barrels, where they undergo malolactic fermentation for up to 24 months before final filtering and bottling are done. Beef and venison pair incredibly well with this wine.

Red Wine Zlatan Otok Babic 2015. When winemaker Zlatan Plenkovic founded his winery in 1985 he was following in the footsteps of his ancestors who have been making wine for generations. Based on the idyllic southern island of Hvar, Zlatan today owns a series of prime hillside plots here and makes wine from plots owned by the family in Sibenik on the Croatian mainland. This sensational Babic is crafted with top quality grapes from Sibenik where the variety thrives thanks to the sunny summers, poor soils, and dry conditions. Even in hot years the Babic grape is able to retain plenty of acidity and aromatic character which provides perfect balance to the rich dark fruit character and firm structure. Poor soils like those found in Sibenik are vital to crafting high quality Babic since they keep the variety’s tendency to high yields in check. To preserve the distinctive personality of the grape variety, Zlatan ages the young wine in large Slavonian oak barrels which allows maturation without giving too much oak flavour to the finished wine. The result is a harmonious red wine with plenty of intense dark berry and cherry notes along with a smooth texture and well-developed tannins which will help the wine to age gracefully.
