Red Wine Tchotiashvili Saperavi Reserve 2015. It is recommended to decant it for half an hour. The Tchotiashvili winery produces high quality and successful Georgian wines from ancient grapes of the Kakheti region. The vineyards are cultivated with natural methods and the grapes are treated according to traditional methods whose knowledge has been passed from father to son for centuries. The vines for this Saperavi wine were planted in 1980 in the Inner Kakheti region, at the base of the Caucasus mountain, 480 meters above sea level. Only the best grapes of the vineyard enter this Limited Reserve. The grapes undergo 3.5 months of maceration on the full skins, pips and stalks in Qvevri, fermenting naturally with wild yeasts before moving into oak barrels for 3 months. The wine is later bottled unfiltered. The Tchotiashvili Saperavi Reserve is a serious wine. It comes with a deep pomegranate color. It is dense and almost chewy. On the nose, it’s all about dark berries, black currants, vanilla, cinnamon, coffee, and licorice. In the mouth it is rich and strong, powerful and tannic with a long and seductive finish. Try it with duck, goose, pigeon, and other game birds.

Red Wine Tinto Pesquera Millenium Gran Reserva 2015. It is recommended to decant 1 hour before serving. Located in Pesquera de Duero, about 200 km north of Madrid, in the Ribera del Duero wine region, Tinto Pesquera winery is the creation of Alejandro Fernandez who founded in the 70’s. Since then, the company has grown to more than 200 hectares of land. In this region, the soil is of alluvial origin characterized by the presence of clay, sand, and infiltrations of limestone and debris. The continental climate, tempered by the nearby Atlantic Ocean, and the rainfall regime help to create an ideal terroir for growing grapes. Produced with Tempranillo grapes from the historic Viña Alta vineyard, Tinto Pesquera Gran Reserva Millenium is a wonderful red wine produced only in exceptional vintages. The grapes, harvested manually, are transferred to the cellar and de-stemmed before being flared into stainless steel tanks, where they undergo maceration and alcoholic fermentation. The wine then spends 24 months in French oak barrels and remains another 10 months in the bottle before being placed on the market. The Gran Reserva Millenium is an intense, broad, and structured wine. On the nose, the aromas of ripe black fruit stand out, followed by toasted and smoked notes due to the barrel aging. On the palate, it is elegant and smooth, with silky tannins and a harmonic and very long finish. Try it with game, roasted meat or lamb stew.
