Founded in 1996, by Scott Greer, after a long career in finance, together with his partners Pat and Lanie Dineen, Sheridan Vineyard is located in the state of Washington, near the city of Zillah. Since 2000, when the first wine was bottled, the company has focused on sustainable agricultural practices and the cultivation of Cabernet Sauvignon, Cabernet Franc, Merlot, and Syrah. Produced mainly from Cabernet Sauvignon with the addition of 20% Cabernet Franc, and aged for 28 months in barriques, L’Orage is the most iconic and representative wine of Sheridan Vineyard, whose first harvest dates back to 2000. It is an exceptional wine, which shows an intense ruby color with magenta nuances. On the nose, the wine reveals a decisive and layered aromatic profile with spicy dark red fruit, especially plum, blackberry, and sweet cinnamon. On the palate, the fruit is slightly more ripe than it feels on the nose and floral notes and slightly exotic aromas are added. The wine is rich, round, and full-bodied with fine tannins, and a long and persistent finish that recalls dark chocolate. Try it with grilled red meat, Texas-style brisket or spicy pork ribs. But don’t forget to let it breathe for an hour in order to fully release its perfumes.

Red Wine Zyme 60 20 20 Cabernet 2018. Zyme was founded by Celestino Gaspari in his garage after the talented winemaker decided to pursue his dream of making his own wine after helping to found over a dozen wineries in the Veneto in his role as a consultant winemaker. Born into a family of farmers, Celestino initially worked with livestock before falling in love with winemaking. For years he worked with legendary Italian winemaker Giuseppe Quintarelli where he learned from the master how to make traditional Veneto wines like Amarone and Valpolicella. When he began his own project, Zyme, Celestino decided to explore a more experimental approach to winemaking which has drawn admiration from wine critics and enthusiasts all over the globe. Celestino’s charming Bordeaux blend is named after the proportions of each grape variety in the composition; 60% Cabernet Sauvignon, 20% Cabernet Franc, and 20% Merlot. The nose opens with evocative aromas of cassis, black cherry, sweet spices and licorice, while the first sip reveals a bold flavour profile with intense dark berry notes, a firm structure, full body, and well-defined tannins. This is a wine that can be cellared for several years and is also ready to be enjoyed now alongside a hearty beef bourguignon or prime steak served with fries.

Red Wine Skouras Megas Oenos 2018. It is recommended to decant it for an hour. Regarded as one of the pioneers of the Greek wine renaissance, George Skouras graduated in enology in Dijon and started his own winery in the mid-1980s with the production of the Megas Oenos wine, an unusual and innovative blend, at least for the time, of a local grape with Cabernet Sauvignon. The winery has high-altitude vineyards and is widely known for its wines with an excellent capacity for evolution. Megas Oenos is a blend of 80% Aghiorghitiko and 20% Cabernet Sauvignon. The grapes are sourced from vineyards in Nude Nemea and the Corinth Mountain, located on rocky soils 700 meters above sea level. The Cabernet vines are about 35 years old, while the Aghiorghitiko ones are between 30 and 66. The grapes are fermented and macerated in stainless steel vats. The aging, instead, takes place in new French barriques for 18 months and in the bottle for the following six months. This award-winning wine shows a deep and attractive red color, with an impressive aromatic palette starring vanilla, cherry jam, and cedar apples, with traces of chocolate, herbs, peppers and wood. Full mouth, with a pleasant, elegant and balanced style. Excellent aftertaste. Try it with roast beef or grilled red meats, or aged cheeses.
