Red Wine Moss Wood Cabernet Sauvignon 2019. One of the pioneering wineries in the Margaret River region, Moss Wood was founded in 1969 in Wilyabrup. For the past four decades the estate has been in the capable hands of Clare & Keith Mugford whose dedication and attention to detail has produced some of the region’s very finest wines. Margaret River’s maritime climate and gravelly loam and clay soils are ideally suited for growing Cabernet Sauvignon. The Mugfords have taken inspiration from the wines of the Medoc in Bordeaux which are produced in similar conditions, combining power and depth of flavour with refinement and elegance. Their classic Moss Wood Cabernet is crafted from hand picked grapes with a small quantity of Petit Verdot and Cabernet Franc to add complexity to the cuvee. After fermenting in stainless steel tanks the young wine is transferred to mostly used French oak barrels. The wine is then aged for 31 months to soften the tannins and add subtle spiced and oaky notes to the rich core of dark berry, plum and cherry. The result is a big and beautiful Margaret River Cabernet that is ideal for pairing with hearty red meat dishes or holding in the cellar for another 10-15 years.
