Founded in 1999 by Mark Ryan McNeilly, the Mark Ryan winery quickly established itself as one of the most interesting companies in Washington state, producing high-quality wines. The Cabernet Sauvignon and Merlot grapes for the production of this splendid wine come from some of the best vineyards in Washington State. The blend includes also small quantities of Cabernet Franc and Petit Verdot. In the cellar, the must is treated with extreme care and delicacy; it is never pumped and is finally aged for 18 months in 74% new French oak. Considered as the entry-level of the Mark Ryan wine range, the Dissident is a smooth and luscious blend with great character. The nose is filled with notes of black fruits, a touch of leather, and some vanilla hints rounding out the whole aromatic experience. On the palate, the wine is round, soft, and dry with a good fruit concentration and fine tannins. It is a wine that can be enjoyed now but also shows a good aging potential. It is extremely food-friendly; it works well with any red meat but it’s perfect with a juicy steak or game.

Red Wine Mark Ryan The Chief Board Track Racer 2019. No need to decant but best to open it half an hour before service. Established in 1999, the Mark Ryan winery produces high-quality wines in limited quantities. The grapes are selected from the best vineyards in the Horse Heaven Hills, Yakima Valley, and Columbia Valley areas in Washington state. Today, after more than 20 years in business, this winery is recognized as one of the most important in the state, having helped establish Washington as an important wine region of the United States. Formerly known as The Chief, Mark Ryan Winery’s Board Track Racer is a solid blend of 77% Cabernet Sauvignon with the addition of Merlot, Malbec, and a splash of Petit Verdot. It is a full-bodied wine with a dense flavor that fully reflects the typical Columbia Valley Cabernet Sauvignon. The color is intense and deep. The nose is articulated and fragrant with aromas of blackberry and blueberry compote and perfectly integrated oak notes. In the mouth, the fruity flavors come back with a long finish of cocoa and vanilla. The texture is round and the tannins are smooth. Try it with grilled red meat, a tasty cheeseburger with bacon, steak or a succulent lasagna Bolognese.

Red Wine Matar Cumulus 2019. The Pelter family have been farmers in Israel since 1970 when Sam Pelter emigrated to the country from the USA. They are well known in Israel for their boutique Pelter winery in the Golan Heights, and in 2012 Sam’s two sons Tal and Nir started a new winemaking project named Matar. This label specialises in top quality kosher wines crafted from fruit sourced from across Israel. This diversity of terroirs gives the family maximum flexibility and creativity in their winemaking. Cumulus is a charming kosher red blend composed of Cabernet Sauvignon, Merlot and Cabernet Franc grapes from the Golan Heights and Jerusalem Hills. The fruit is all harvested by hand to maintain quality and fermentation takes place in stainless steel tanks at a low temperature. The young wine is then aged in French oak barrels for 14 months before bottling. The blend is named after the soft, pillowy Cumulus cloud thanks to its soft, smooth texture and easy-going medium body with ample ripe fruit flavours. Blackberry, cassis and dark cherry notes abound on the nose while the palate offers plenty of elegant tannins and a long finish with lingering notes of spice, woodsmoke, and crushed wild berries.
