Red Wine DAOU Cabernet Sauvignon Reserve 2019. Brothers Georges and Daniel Daou founded their winery over a decade ago after searching for top quality land in Napa and discovering that actually Paso Robles had everything they needed. The ambitious duo strive to craft Bordeaux-style wines with a New World vibrancy and expressiveness. This corner of Paso Robles is a perfect fit for that mission thanks to the Napa-like climate and soils which are rich in limestone like many of France’s top vineyards. The DAOU Cabernet Sauvignon Reserve is made with top quality grapes sourced from the brothers’ vineyards which sit at 2200 feet of altitude. This elevation helps to preserve balancing freshness in the finished wines as well as ensuring the development of intense, concentrated flavours and aromas. Following the fermentation process the wine is aged in 80% new French oak barrels for 18 months to allow the wine to mature and add extra complexity. This stunning wine opens with cassis, blackberry and dark cherry aromas along with hints of sweet spice and dark chocolate. The first sip reveals complex layers of flavour which slowly unfold in the mouth, moving from crushed ripe berries and currant jam to deep herbal and earthy tones. On the palate there is a smooth mouthfeel, well-defined structure and firm tannins which will soften with a few years of cellaring.

This voluptuous Buccella wine immediately captures your attention with its vivid dark ruby hue and enticing aromas of cassis, black cherry and dark chocolate. The first sip reveals a silky smooth texture, firm structure and generous full body which is complemented by the intense ripe berry flavours and smoky tobacco notes. Although predominantly made with Cabernet Sauvignon, Bucella also add smaller quantities of Merlot and Petit Verdot to add a touch of softness to the finished blend and the wine is aged in oak barrels for 18 months before it is deemed ready for release. Red Wine Domaine du Castel Grand Vin 2019. Decant 1 hour before serving. The story of Domaine du Castel dates back to the 1970s when Eli Ben Zaken migrated from Milan to Israel with his family. He bought a small piece of land close to Jerusalem and began to fulfil his dream of working the land by planting an orchard and keeping chickens. In 1988 Eli decided to plant the first modern-day vineyard in the Judean Hills and in 1995 he released the first 600 bottles of his Grand Vin matured in oak barrels which he had imported from France himself. Eli’s Grand Vin quickly gained a cult following and a bottle was even sent to the head of the wine department at Sotheby’s auction house, Serena Sutcliffe, who heaped praise on the wine. Made in the classic Bordeaux style, the Grand Vin is a blend of Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc grapes which are carefully selected from Eli’s top vineyards. Following the vinification the young wine is aged in oak barrels for 16 months followed by a further four months of maturation in concrete tanks. The result is a remarkably complex red which boasts a full body, rich dark fruit flavours and a very long finish. Although approachable now, this is a wine which has excellent ageing capabilities and will continue to develop and evolve over the next decade or so.
