Red Wine Acustic Celler Ritme Negre Priorat 2018. Decant 1 hour before serving. Like many Catalan wineries, Acustic Celler is a modest project founded by a passionate young winemaker who quite literally has the region’s wines running in his blood. In 2003 Albert Jané started his own winery in a 200-year old cellar in the tiny town of Marçà and began to piece together vineyard plots across the renowned Montsant and Priorat wine regions. Today he works with a variety of 35 to 105 year old vines which are all farmed organically and harvested by hand to produce the best wines possible from this harsh land. Ritme is Albert’s youngest red Priorat wine which is made with 70% Garnacha and 30% Carinena grapes sourced from vines which are up to 80 years old. These old vines give incredible intensity and richness to the wine along with a distinctive minerality from the slate soils which are so typical of the Priorat region. As soon as you open and serve this wine you will notice the seductive juicy red fruit aromas and hints of toast and sweet spices from the 10 months of ageing in oak. In the mouth the wine is incredibly smooth with gentle tannins and concentrated fruit flavours which make it an excellent partner for cured meats, hard cheeses or hearty stews.

Red Wine Achaval Ferrer Cabernet Sauvignon 2018. It is recommended to decant it for an hour before service. The Achaval Ferrer winery was founded in 1998 in the Lujan de Cuyo region in Mendoza by six friends who are passionate about wine. The technical direction is in the hands of Italian winemaker Roberto Cipresso, who is a specialist in small productions and high-quality wines, and has led the company to brilliantly interpret the terroir of its vineyards. In fact, despite being very young, Achaval Ferrer is already considered one of the best wineries in the world. Like any other Achaval Ferrer wine, this Cabernet Sauvignon is representative of the precise company philosophy based, in the vineyard, on high sustainability, and in the cellar on minimal intervention, without filtrations, corrections or additions of yeasts. The wine is produced in limited quantities, with grapes from two vineyards: one quite old, planted in 1928 in the Medrano region, and the other in the Alto Agrelo region, with plants just over 15 years old. The wine ages for ten months in new French oak barriques. The wine is young, lively and intense with seductive perfumes of ripe black fruits, minerals, spicy spices, and subtle hints of oak. In the mouth, it has medium density and velvety tannins, with a juicy final persistence of spices and black fruit. Delicious with roast lamb, barbecue and red meat dishes in general.

Red Wine Belle Glos Las Alturas Pinot Noir 2018. Decant 2 hours. Beautiful deep ruby in colour, the intense nose releases blackberry, raspberry, ripe plum, cranberry and hints of chocolate, vanilla and a slight earthy note. The palate delivers a complex mix of ripe red and black fruit, exotic spice but also a farm yard earthiness that works very well with the oak infused vanilla notes. This medium bodied wine displays ripe tannins that are well integrated with the bright acidity and layers of flavour garnered from the ripe fruit. A very well balanced wine. The finish is medium in length and ends with a subtle chocolate note. Great to drink on its own or even better when paired with salmon, pork, pasta, beef, or ham. The Belle Glos name comes from the winemaker, Joseph Wagner, who named it in honour of his grandmother Lorna Belle Glos Wagner who was the co-founder of Caymus. Las Alturas means the heights” which fits very well as the vineyard is at one of the highest points in the area. The grapes were harvested early morning while still cool. Hand sorted and de-stemmed prior to a cold maceration in stainless steel tanks that can last up to 2 weeks. Only the free run juice is used which ensures top quality, superb wines. This juice was barrelled in French oak of which 60% was new, for 9 months prior to bottling.
