The nose offers up ripe dark fruit such as blackberry and cherry, while subtle spice and vanilla intermingle very well. The palate explodes with blackcurrant, ripe black cherry, with layers of vanilla, chocolate and tobacco notes adding a different dimension to the wine. This is a full bodied wine has rich tannins that are balanced by great acid, alcohol and layers of ripe fruit. The finish is long, powerful and lingering ending with a eucalyptus note. Fantastic wine in anyone’s book. Fantastic on its own but even better with a joint of beef, venison, game, hoi sin ribs and sausages. Caymus Vineyards are renowned for their superb Cabernet Sauvignon (amongst other things) and they have developed new techniques that add richness, flavour and characteristics that can’t otherwise be achieved. This technique helps to increase colour, mature the tannins in the wine and develop rich and deep seated flavours, textures and complexity in the wines. Red Wine Caymus Zinfandel 2019. No decanting necessary. Wagner Wines produce a small amount of Zinfandel despite being better known for their Cabernet Sauvignon and what they do with it is now legendary! It is highly sort after due to its quality and limited production. Zinfandel is a quintessentially Californian wine though it is better known as Primitivo in Europe. Made from grapes that benefit from the cooling effects of the Pacific and the warm sunshine give the perfect conditions for super ripe grapes with a high sugar content. The wine can be fermented into levels of alcohol in excess of 15%, which is approaching the upper limit of where fermentation occurs naturally. On the eye, the colour is a rich ruby. On the palate, the flavours are in line with the nose. Dark fruit such as blackberry and blackcurrant are very prominent but a pleasant hint of chocolate and spice blend beautifully. It is a refreshingly fruit forward wine that has high alcohol and medium tannins, providing a lovely balance in the wine.
