Red Wine Tzora Judean Hills 2020. Tzora Vineyards was established by Ronnie James in 1993 with the ambition of revealing the viticultural potential of the Judean Hills to the world. The region is close to the Mediterranean Sea with vineyards planted at high elevation where they receive plenty of cooling breezes from the mountains and mists rolling in from the coast, making it well suited for producing elegant and refined wines made in an Old World style. Today Ronnie’s son, Dor James, is in charge of the vineyards while Eran Pick, Israel’s first Master of Wine, is the head winemaker. Their wines are made as single vineyard bottlings and a light touch is used in the winery to allow the unique terroir of each plot to shine through in the finished wine. The Tzora Judean Hills red is a delicious blend of Syrah, Cabernet Sauvignon and Petit Verdot grapes which are harvested from hillside vineyard plots on the estate. Following vinification the young wine is aged in French oak barrels for 16 months to integrate the different varietal components and add subtle spicy notes to the flavour profile. This creates a vibrant medium-bodied red wine with abundant dark fruit, leather, and dark chocolate notes and a long finish.

Red Wine Vasse Felix Syrah 2020. Founded in 1962 by visionary winemaker Tom Cullity, Vasse Felix was the very first winery in Margaret River. Today its best known for its top quality Cabernet Sauvignon and Chardonnay wines which can easily hold their own to Australia’s finest examples. In total Vasse Felix has four vineyards in the region which they farm using minimal intervention methods to preserve the land for future generations. The unique terroir here is blessed with a Mediterranean climate with regular cooling influence from the nearby Indian and Southern Oceans. This creates ideal growing conditions for premium wines like this elegant Syrah which is sourced from vineyards in the south of the region. Once in the winery the fruit is fermented using wild yeasts which occur naturally in the environment. Red Wine Vignobles Mayard Clos du Calvaire Chateauneuf du Pape 2020. It is recommended to decant for half an hour. The Mayard vineyards were created in 1865 by Gratien Mayard, and now cover a total surface of 43 hectares. Today the estate is represented by a young and dynamic family team. The environment is one of the important values of this winery which is labeled organic and is in constant search of improvement. The historic cuvée Clos du Calvaire Chateauneuf du Pape was created in 1923 by Marie Louise and Alphonse Mayard, grandparents of the current owners. Clos du Calvaire is a blend of grapes from different terroirs of the appellation. It is a pure and authentic Châteauneuf du Pape, aged in vats and barrels for 12 months to respect the expression of Grenache, present in a majority percentage, and integrated by Syrah, Mourvèdre, Cinsault, and Counoise. The harvest is manual, and the grapes are fermented for a period between 25 and 30 days in concrete vats at a controlled temperature with indigenous yeasts. The wine is exceptionally elegant with a complex aromatic palette of red and black fruits, fragrant flowers, and delicate spices. On the palate, it is round and smooth with silky and persistent tannins. Have it with a classic Provencal stew, a beef carpaccio, or even a ratatouille.
