Deep garnet colour with cherry red tinges, the nose delivers intense dried fruit, black cherry, wood, spice, and jam. The palate offers intense fruit, black cherry, with hints of spice, vanilla and chocolate. The full bodied wine has tannins that are silky and well integrated along with good acidity that helps to balance the wine perfectly. The finish is long and persistent and allows this fabulous wine to be enjoyed a little longer. Would match perfectly with red meat, game, venison, spicy sausages, and aged cheeses. Amarone is made by partially drying grapes naturally in the case of Cavalchina, this is carried out by placing the grapes on small wooden trays that are then placed in a wooden hut that provides the perfect drying conditions. The purpose of partially drying the grapes is that the juice is concentrated, as are the flavours and sugars within the grapes. The grapes are hand harvested to ensure that only the best fruit is used for the wines. Traditional fermentation is used and can last for up to 3 weeks . The wine is then matured in new French oak for 12 months prior to bottling. The great combination of alcohol, tannin and acid provides a complex and wine that has superb drinkability yet is capable of ageing well for many years.

Red Wine Duckhorn Decoy Pinot Noir 2019. Drink now through to 2024. This plush Pinot Noir from cool-climate vineyards in Sonoma County opens with bright cherry, strawberry and violet aromas. From the very first sip this accessible charmer is silky soft with gentle tannins and pure red berry, sweet molasses and cedar flavours. In accordance with Duckhorn’s typical house style, the wine spends eight months in French oak with 30% aged in new oak barrels. With its easy-going personality, the Decoy Pinot Noir is an ideal accompaniment for most duck dishes including duck a l’orange, Peking duck with plum sauce and duck confit. Other delicious pairings include seared tuna steaks or a festive roast turkey served with cranberry sauce. The vintage was blessed with a warm spring in Sonoma, leading to early bud break and a long flowering period. The harvest came early, bringing excellent quality grapes with intense concentration, fresh acidity and deep dark fruit flavours. Duckhorn Vineyards sources the grapes for this wine from partner growers with prime vineyards in Russian River Valley, Carneros and Sonoma Coast. Red Wine Franz Haas Pinot Nero 2019. Decant for 1 hour Vivid ruby red in colour, this classic Pinot Noir gives aromas of ripe cherries, soft dark fruit and hints of leather and peppery spices. On the palate, the fruit comes through with ripe blackcurrant, cherry and spice mixed perfectly with hints of leather and earthiness. Tannins are soft but well integrated and the acidity is good, combining well with the relatively high alcohol. The resulting wine is very well structured and provides a long finish with a hint of chocolate at the end. Great match with sausages, beef, lamb, chicken, pasta and cheese. The grapes were vinified in stainless steel vats with a long maceration period. The wine was then placed in oak barriques and a secondary, malolactic fermentation took place. It then matured in the barriques for up to 15 months prior to being bottled, where it was aged for a further 12 months prior to release. The Haas vineyards are located in Bolzano in the Alto Adige area of Italy. They are located in a valley which traps the heat and makes Bolzano one of the hottest cities in Italy. Together with great vineyards, the Hass family boasts generations of winemaking experience, although it is only more recently that the focus has turned to producing quality rather than quantity. Franz Haas, the current owner and winemaker, goes to extreme lengths to ensure that the best fruit is grown and the varietal characteristics and flavours are maintained throughout the process. The resulting wines are top quality with a purity of flavour and balance associated with top quality wines.
