Red Wine Tenuta di Arceno Il Fauno di Arcanum 2019. It is recommended to decant it for half an hour. In the heart of Chianti, in a privileged position between Siena and Florence, the Tenuta di Arceno owns more than 90 hectares of vineyards where a winemaking team led by Lawrence Cronin and Pierre Seillan, produces excellent Chianti Classico wines, and Bordeaux blends, such as Fauno di Arcanum, Valadorna, and Arcanum, in which Cabernet Franc and Merlot predominate. Il Fauno di Arcanum is a classic Bordeaux blend of Merlot, Cabernet Franc, Cabernet Sauvignon and some additional Petit Verdot. The grapes, selected in the vineyards of Arceno di Sotto, La Curva, Colombaio, and San Giovanni, benefit from a warm and well-exposed condition that facilitates ripening. Here the soils, predominantly clayey, produce wines that tend to be rich and opulent. The wine shows a beautiful ruby color of medium intensity. The olfactory profile highlights earthy aromas, but also red fruit, nutmeg, cypress, and rose. On the palate, the wine is smooth and lush with delicate tannins and delicious flavors of black cherry, candied apple, licorice and white pepper. The finish is long and spicy. Try it with ragu Bolognese, pappardelle with wild boar or a nice selection of cheeses.

Red Wine Tenuta di Arceno Strada Al Sasso Chianti Classico Riserva 2019. It is recommended to decant it for an hour. Located between the Ambra and Ombrone rivers, and surrounded by hills covered with vineyards, the Arceno Estate boasts an ancient winemaking tradition dating back to the 10th century. In 1994, it has been bought by the Jackson family. The 92 hectares devoted to the cultivation of vines are divided into more than 60 micro-crus to obtain from every single vine the maximum potential and the highest quality in the final products. The Sangiovese grapes destined for the production of this fine wine come from the La porta vineyard located in front of the door of the San Gusmè walled cell. The micro-cru that bears the name of the same vineyard was planted in 1998 on soil composed of sandstone, limestone, and clay. The Strada al Sasso is characterized by good body and great longevity, in fact, before being put on the market, it ages for at least 30 months, 3 of which are in the bottle according to the regulations. The wine reveals delicate sweet aromas of black cherry, cassis, tobacco, and iris, with tones of licorice stick. In the mouth, it is elegant with an acid-savory backbone, a full body with full and decisive tannins. The aftertaste is long. Try it with Pappardelle with wild boar, Asiago, Manchego, or stuffed guinea fowl.

Red Wine Tenute Dettori Chimbanta 2019. Alessandro Dettori has passionately embraced biodynamic winemaking methods on his family’s estate in northwestern Sardinia. The verdant vineyards occupy a truly remarkable setting overlooking the glittering Mediterrnaean Sea with views out to the island of Corsica. Wherever possible Alessandro and his father work in harmony with Mother Nature, producing tiny quantities of artisanal wines that he says are what they are and not what you want them to be”. The family’s 29 hectares of vineyards are planted with traditional local varieties and the property even boasts some ancient Cannonau vines that were planted in 1883. Their Chimbanta is made from the less well-known Monica variety which comes from 41 year old vines planted on the estate. The fruit is vinified in concrete and glass vats without any fining or filtration and with no added sulfites. The young wine is then left to mature in these tanks for 24-30 months before bottling. Bright Mediterannean herbs, cherries and hints of dried flowers define the nose, while the first sip reveals a medium body balanced by a gentle streak of acidity and smooth, ripe tannins. The complex flavour profile makes this a great match for classic Sardinian dishes like suckling pig, lamb stewed with artichokes, or even some peppery salami.
