Red Wine Movia Veliko Rdece 2015. Decant 2 hours before serving. The Movia winery has been in the capable hands of the Kristančič family since 1820, although the estate itself was founded in 1700. The winery is located in western Slovenia’s Goriška Brda region right on the border with Italy, and half of the estate’s 18 hectares of vines actually lie on the other side of the border. The generous Mediterranean climate here is ideal for making delicious wines with warm sunny days cooled by breezes from the nearby sea. This spectacular red wine is a Bordeaux-style blend composed primarily of Merlot along with a smaller amount of Pinot Noir and Cabernet Sauvignon. The grapes are farmed organically and harvested as late as possible to ensure optimum maturity. Fermentation is carried out using wild yeasts and is carried out in barriques. In total the wine is matured in French oak barriques for 6 years.

Red Wine Castello di Verduno Barolo Massara 2015. Decant for two hours. A beautiful purple/ blue colour immediately promises a sophisticated experience. On the nose there is ripe, jammy fruit with floral hints and a little spice mixed with cherries, tobacco and leather. On the palate, these flavours follow through with a tremendous mix of ripe fruit, cinnamon and vanilla. The tannin is rich and silky with great acidity to balance. The finish is luxuriously long as you would expect from an ultra premium full bodied wine. Match with steak, goose, truffles, game, risotto and rich smoked cheese. The Castello di Verduno is one of the top vineyards in the region with a perfect combination of terroir and aspect to produce the highest quality fruit. The philosophy is to keep intervention to a minimum whilst making sure that the fruit is nurtured to produce the best berries possible. Hand harvested to ensure the best and ripest fruit is used, the fruit is macerated and fermented in stainless steel for 25 days. It is matured for 26 months in oak casks before spending a further 8 months in steel tanks. It is bottled without any filtration (hence the need for careful decanting) and left for 2 additional years prior to release.

Red Wine Parusso Barolo Bussia 2015. Decant 1 hour before serving. The history of the Parusso estate can be traced right back to 1901 when founder Gaspare Parusso purchased his first plot in the hamlet of Mariodino. The Parusso family later also bought the charming farmhouse in Bussia which is today the headquarters of the winery. In total they have 22 hectares of vines set in some of Barolo’s top crus including Mosconi, Le Coste, and Mariondino. This magnificent Barolo is made with top quality fruit from Parusso’s Rocche and Munie vineyards in the renowned Bussia cru. The vines planted here have a typical age of 15-50 years and are planted at around 300 metres above sea level on sandstone and chalky soils. The grapes are harvested by hand to maximise quality and then fermented using wild yeasts found naturally in the winery and on the grape skins. The young wine is then kept in small oak barrels for 18 months followed by 6 months of ageing in the bottle. The result is a powerful and very ageworthy Barolo that will mature beautifully if cellared for another decade or so. Punchy red fruit flavours of plum, sour cherry and redcurrant define the nose, with deeper notes of leather, baked earth and spice coming to the fore on the palate. Try pairing with hearty red meat dishes like a ribeye steak, venison or game stews to match the intense flavour profile.
